I wonder why it is so difficult to keep foods that are stored at the proper temperature. I was in one of the grocer stores on the list and their entire seafood area, except shrimp and lobster, had been cleared. That represents a lot of wasted fish.
Improper cooling is the most prevalent violation and it seems to me to be an easy problem to avoid. Am I wrong?

Proper cooling is a bit tricky. Usually they’re not talking about the refrigerator being the right temp but rather the food in the refrigerator being the right temp after it’s been cooked. A great example is soup. A restaurant is going to make a large pot the day before they’re going to serve it. Hot soup cannot come of the stove and go into the refrigerator to cool because during the hours it takes to cool there is a potential for bacteria to grow. It must be quickly cooled in an ice bath and then when it has reached the right temp (cannot remember what that is off hand) it can then be put in the fridge. And this is just one example of something that happens several times a day. All it takes to get a violation is a few degrees difference from the “proper temperature.” It really isn’t something to worry about, I worked in a restaurant for 15 years, we regularly got this violation, and we did our best to follow the rules. . I ate there every day, never got sick and neither did our customers.

Why do I hear on WBAL this morning that there was a outbreak of gastroenteritis in Harford County and that the most likely cause at this point is the Outback Steakhouse in Bel Air – a story that’s been developing over a few days now but still has no mention in The Dagger?
Clearly from these monthly brainless reports that the Dagger chooses to publish, that Dagger reporters at least know people in the Harford County health department. Why was this the only news outlet that didn’t report on the initial reports 2 days ago that a) there is an outbreak and b) the possibility of a link to a restaurant in the area is being explored. Why, now that Outback has issued their own press release on the topic is there still no mention? Why are Dagger reporters putting cozy relationships with the business community ahead of public awareness? Why didn’t the Dagger release information that might help people avoid serious illness???
Sadly the answer is that this story didn’t fit with the Dagger’s fox-news style political agenda (business good, all others are bottom feeders looking for handouts or a chance to rob you unless they’re buying something). When it comes to reporting on business negligence, The Dagger is what is stabbed in all our back.
So much for credible journalism. Can’t wait to read the next article Dagger publishes which will be yet again shilling for racist xenophobe tea baggers like Del McDonut and Rep Harris.
