between the economy being what it is…and folks paying more attention to finances and budgets for dining out…this would seem a proper outcome for those in the food buisiness who supply a mediocre plate, at a prosperous price, with dimly lit waitresses and waiters….to just catch up and get real or get out.
the good side to all this ‘slow down’ is it will be a chance for the ‘weeding out’ of greedy hogs who never really did that much business, and really ripped folks off, with fancy menus, and meals that were far from worth the price.
It’s been said, and I agree, ‘no one minds paying a little more for a great meal, good service and nice atmosphere!!”…
that’s true…but the places that we try and find unsatisfactory…so let them fold…get on to something you do well…folks are waking up all around the towns…and the food places that always did a great job, sure they are a little slow, but many are booming, because they aren’t cutting back on service and quality and preparation…
and maybe, just maybe, the folks that aren’t going to the places that didn’t come up with a plan to please folks…well, maybe those clients are now heading to the places that always were on top of things…
same goes for all merchants…the folks you treat well, will try their best to continue to do business with you…
maybe ‘customer loyalty’ will come back in vogue during the tough times ahead.

The Harford County Government Health Department needs to define what they mean when they say proper temperature.
Is this Global warming Temperature?
Is this Global cooling Temperature?
Or is this all of the above?
Silly I say.
If you want the perfect temp to eat your food, cook it at home.
However, I did read where Julia Child once said the hardest thing about cooking was the serving process.
She was always at her wits end to ensure everything arrived on the table at the perfect temperature.

Proper temperature means cooled or heated to the proper temp zone in a certain amount of time or just temp in general. For instance if you are making a giant batch of cream soup and you throw it in a 5 gallon bucket and keep it out in the kitchen until its room temp, that would not be the correct way to do it and it would take a long time. Generally you would place the soup in smaller containers and then place them in an ice bath to get the temp down quickly. It must be cooled to below 47 degree (i believe thats correct) within a quick period of time. Reheated/heated items like sauces and soups all have certain temps as well. Again if you have a soup that is heated ready to be served it should be above ( i think) 180 degrees. If it were at 100 degrees it would have the potential to make you sick.
In my opinion some of these might be blatent but most are probably just minor things. Its rare that the health dept doesnt find something wrong.

How can anyone say this is “Silly”? I don’t know about the rest of you, but have you ever gotten food poisoning? It’s not pleasant.
I say bust the offenders!!! If they care about the business, then care about the quality.

No surprise about Bonefish. My wife got food poisoning from eating the salmon there on our anniversary and after three phonecalls to the restaurant still no response!
